Wellll this post was going to be about all the gluten free apple recipes I was going to make after we took a family day trip to Justus Orchards in Hendersonville, NC. What a beautiful orchard! The kids got to try apple picking for the first time, bounce on a giant bounce pillow, eat some tasty apple cider donuts and apple fritters (no not gluten free but I have a weakness for donuts. I am determined to re-create it gluten free though now that I’ve had that apple cider flavor explosion in a donut…all rolled up in cinnamon and sugar…it’s something I simply must do. If only for my husband whose gluten allergy is much more severe than mine because he didn’t get to share in the experience…so I have to recreate it…because that’s what good wives do right? 😉
Back to the first sentence though. This post is not going to be about the joys of apple baking. Moving out of state and unpacking/organizing things has apparently taken it’s toll. I’m only 32 weeks into the pregnancy but am getting too many cramps and contractions to have this early. My first doctor appointment up here isn’t until next week, I’m putting myself on bed rest until the feelings subside. It’s killing me to see boxes I want to move and put away now that the new rug is in I’ve kinda been going ham at it the last few days to get things in order but my uterus is pulling the breaks on all my nesting efforts for the moment.
That being said, these apples are too good to go to waste, and I really feel like light fresh healthy meals. We’ve all been eating these juicy apples a few a day but since I can’t bake right now…I want to incorporate them into meals too. I love salads with grilled chicken, apples, cucmbers, pecans, feta and balsamic dressing so that is happening today.
Juicing also has come to mind once we finished the gallons of apple cider we bought. So I’ve commissioned my sister to go to the store and buy an old staple…the 25 lb bag of organic carrots that gets us through a week of juicing. I am most in the mood for Giada De Laurentiis Rise and Shine juice but I’m going to share how we make it so the kids will drink it too. First-I XXXXX out the Ginger. Sorry to the ginger lovers who often unite against me at sushi stops, but I don’t like ginger in anything if I can taste it. If you can cook with ginger and I don’t know it’s in there-GOOD. If I can taste it at all-gag me. My kids don’t like it either. The only ginger I like…is ginger ale…and oddly that does not taste like the shaved, juiced fresh ginger or the pink stuff I tell them to HOLD PLEASE and sub for more wasabi at the sushi bar!
We make her Rise & Shine juice with a few alterations. We also make a lot more of it because we drink a HUGE glass. If you’re going to go through the work to use and clean a juicer…I say make a meal out of it! 😉 24 oz glass for breakfast? Why don’t mind if I do…my kids will easily drink a 12 oz cup of this themselves!
Christina’s Kid Friendly Green Sunshine Juice
Per each kid having juice:
2 organic carrots
1 organic apple
1/3 of a peeled English Cucumber
1/2 of a peeled lemon no rind
1 celery stick
1 large handful of spinach or 1 entire rainbow swiss chard leaf
For us adults, we follow the same but add more carrots and apples to get a full glass and leave a piece of the lemon rind on if you like it to have more lemon punch than the kids would like. Serve over ice.
